You'd be forgiven for mistaking this healthy, easy-to-whip-up frozen snack for a sophisticated dessert, and who are we to stop you! From the kitchen of Lindsay Mustard, RHN, this sugar-free frozen treat could easily do double-duty as a midday snack and a guilt-free after dinner indulgence. Get snacking!
Ingredients:Â
- 1 cup plain greek yogurt
- 1 Orange, zested and juiced
- ½ tsp vanilla extract
- ¼ tsp sea salt, divided
- Optional: 1 sachet Ener-C Sugar-Free Orange Multivitamin or liquid stevia, to taste
Directions:Â
- Line a baking sheet with parchment paper and set aside.Â
- In a small bowl, combine all of the ingredients (except for the orange zest) and some of the sea salt. Whisk until smooth and then spread evenly with a spatula on the baking sheet.Â
- Top with orange zest and a sprinkle of sea salt and then set in the freezer for 1 hour.Â
- Remove the bark from the freezer and break into 12 pieces.Â
- Store in an airtight container in the freezer for up to 1 month!Â
